The Bristol office of South West corporate commercial law practice Murrell Associates has advised long-standing client Cornish burger, hotdogs and beer restaurant chain Hubbox on its first outlet in the city.

Hubbox is due to open what will be its sixth outlet in the former Las Iguanas restaurant on Whiteladies Road in May.

The fast-growing business, which uses locally sourced ingredients and drink served in relaxed urban-inspired interiors, was founded by award-winning Bristol restaurateur Richard Boon in St Ives and has since expanded into Truro, St. Austell, Plymouth and Exeter.

It recently secured two rounds of equity investment worth £3.2m to fund further expansion. The first, last October, brought angel investors Mark Harper and Michael Wodskou on board with Mr Harper now chairman.

Then in January it completed a second round with private equity fund Provenance Investment Partners injecting further funds in a deal that valued Hubbox at around £5m.

Provenance is backed by ex-BBC director-general Greg Dyke, former Diageo chief Paul Walsh and retail sector veteran John Lovering, whose CV includes spells at Debenhams, Somerfield and a number of pub chains. Provenance fund director Simon Henderson also joined the Hubbox board.

Murrell Associates Bristol-based solicitor Rebecca Dixon, pictured below, who advised on the purchase of the Bristol site, said: “Hubbox’s commitment to local ingredients and drinks, and great quality, will make the new venue a great addition to Whiteladies Road.

“Hubbox is just one of many Cornish companies which are moving into the Bristol market. We’re seeing this as a ‘mainstreaming’ of local food and drink offers and it’s an exciting new phase in the development of the local food scene in Bristol and elsewhere.”

Award-winning restaurateur and Hubbox founder Richard Boon said: “I’m delighted to be able to bring Hubbox back to my home town of Bristol.

“This was a complex transaction which involved several parties and various interests. We have an established relationship with Murrell Associates because of its food and drink sector and property expertise and Rebecca was able to ensure that we continued to benefit from that, as well as her knowledge of the Bristol market.”

Murrell Associates, which also has an office in Truro, offers specialist commercial, corporate and property advice to the food and drink sector.
